COCONUT CAKE WITH PINEAPPLE FILLING

Ingredients:

For the cake:

  • 2 cups all-purpose flour
  • 1 cup shredded coconut (sweetened or unsweetened, according to preference)
  • 1 cup granulated sugar
  • 1 cup coconut milk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

For the pineapple filling:

  • 2 cups crushed pineapple (canned or fresh)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

For the frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut, toasted (for garnish)

Instructions:

  1. Prepare the Cake:
  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, whisk together the flour, shredded coconut, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the coconut milk, vegetable oil, eggs, and vanilla extract until well combined.
