Healthy cookies without flour and sugar

No Sugar Energy Cookies. They are made with a variety of nuts and seeds, including almonds, pumpkin seeds, sesame seeds, and sunflower seeds. They are a healthy and delicious snack or dessert that is packed with protein, fiber, and healthy fats.
Ingredients:

  • 70g dried apricots
  • 50g walnuts, chopped
  • 70g hazelnuts
  • 30g pumpkin seeds
  • 40g sunflower seeds
  • 20g sesame seeds
  • 20g flaxseed
  • 60g almonds
  • 20g pine nuts
  • 40ml natural honey
  • 1 egg white
  • A pinch of salt
    Instructions:
  • Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
  • In a food processor, pulse the apricots, walnuts, hazelnuts, pumpkin seeds, sunflower seeds, sesame seeds, flaxseed, almonds, and pine nuts until finely chopped.
  • In a separate bowl, whisk together the honey, egg white, and salt.
  • Add the wet ingredients to the dry ingredients and mix until well combined.
  • Drop rounded tablespoons of the dough onto the prepared baking sheet.
  • Bake for 15-20 minutes, or until golden brown.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
    Tips:
  • For a chewier cookie, bake for a shorter amount of time. For a crispier cookie, bake for a longer amount of time.
  • You can add other nuts and seeds to this recipe, such as cashews, pecans, or chia seeds.
  • If you don’t have honey, you can use maple syrup or agave nectar.
  • These cookies can be stored in an airtight container at room temperature for up to 1 week.
