A savory and cheesy delight perfect for any meal!
Ingredients:
1 pie crust (store-bought or homemade)
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
6 cups fresh spinach, chopped
4 large eggs
1 cup half-and-half or heavy cream
1 cup shredded Swiss cheese
1/2 cup crumbled feta cheese
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp nutmeg
Instructions:
Preheat Oven: Preheat your oven to 375°F (190°C). Place the pie crust in a 9-inch pie dish and set aside.
Cook Spinach: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and fragrant, about 3-4 minutes. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
Prepare Filling: In a mixing bowl, whisk together the eggs, half-and-half or heavy cream, salt, black pepper, and nutmeg. Stir in the shredded Swiss cheese and crumbled feta cheese.
Combine and Fill: Add the cooked spinach mixture to the egg mixture and stir to combine. Pour the filling into the prepared pie crust.
Bake: Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the top is golden brown. A knife inserted into the center should come out clean.
Cool and Serve: Allow the quiche to cool slightly before slicing. Serve warm or at room temperature.
