Chicken Quesadillas

Ingredients:

  • 2 (8-inch) tortillas (use corn tortillas for gluten-free)
  • 1/4 cup cheddar cheese, shredded
  • 1/4 cup Monterey Jack cheese, shredded
  • 1/4 cup cooked chicken, shredded or diced
  • 1 tablespoon onion, diced
  • 1 teaspoon cilantro, chopped
    Directions:
  1. Heat a pan over medium heat.
  2. Place one tortilla in the pan and sprinkle half of the cheddar cheese and half of the Monterey Jack cheese evenly over the tortilla.
  3. Add the cooked chicken, diced onion, and chopped cilantro on top of the cheese.
  4. Sprinkle the remaining cheese over the chicken mixture.
  5. Place the second tortilla on top to cover the filling.
  6. Cook the quesadilla until it is golden brown and crispy on one side, about 2-4 minutes.
  7. Carefully flip the quesadilla using a spatula and cook until the other side is golden brown and the cheese is melted, about another 2-4 minutes.
  8. Once both sides are golden brown and the cheese is melted, remove the quesadilla from the pan and transfer it to a cutting board.
  9. Let the quesadilla cool for a minute or two before slicing it into wedges.
  10. Serve the chicken quesadillas warm with your favorite toppings such as salsa, guacamole, sour cream, or hot sauce.
    Option: You can use your favorite size tortillas for this recipe. Just adjust the amount of filling accordingly.
