- 20g pine nuts
- 40ml natural honey
- 1 egg white
- A pinch of salt
Instructions: - Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
- In a food processor, pulse the apricots, walnuts, hazelnuts, pumpkin seeds, sunflower seeds, sesame seeds, flaxseed, almonds, and pine nuts until finely chopped.
- In a separate bowl, whisk together the honey, egg white, and salt.
- Add the wet ingredients to the dry ingredients and mix until well combined.
- Drop rounded tablespoons of the dough onto the prepared baking sheet.
- Bake for 15-20 minutes, or until golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Tips: - For a chewier cookie, bake for a shorter amount of time. For a crispier cookie, bake for a longer amount of time.
