INGREDIENTS:
½ cup pineapple juice
2 tbsp. sugar
1 large egg
2 tbsp. melted butter
¼ tsp. vanilla extract
1 ¾ cups flour, divided
½ tbsp. Instant yeast
INSTRUCTIONS:
Lightly grease a small baking dish with cooking spray.
Add sugar, pineapple juice, egg, vanilla extract, and butter in a mixing bowl, and mix until well combined.
Add 1 ½ cups of flour and instant yeast, and mix until a sticky dough forms.
Cover the bowl with a clean kitchen towel and let it rise warmly for about 1 hour.
After rising, dust the counter and the dough with some of the remaining flour.
Knead the dough using your hands for 3 to 5 minutes or until it becomes smooth.
Divide the dough into eight equal portions and shape each into a small ball.
Place the dough balls into the greased baking dish, leaving some space between each.
Cover the dish again with a kitchen towel and let the dough balls rise for an additional hour.
Place the dish in the preheated oven at 350°F and bake the mini rolls for 20 to 25 minutes or until golden brown.
Once baked, remove from the oven and let them cool slightly before serving.
