Ingredients:
1 1/2 cups all-purpose flour
1/2 cup cornstarch
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon paprika
1 3/4 cups cold club soda
1 lb white fish fillets (such as cod or haddock)
Vegetable oil for frying
Instructions:
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and paprika.
Gradually whisk in the cold club soda until the batter is smooth.
Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
Dip each fish fillet into the batter, allowing any excess to drip off.
Carefully place the battered fish fillets into the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side.
Remove the fish from the oil and drain on paper towels. Serve hot.
