Spareribs and Cheesy Mashed Potato Recipe

Ingredients:
Spareribs:

  • 2 racks pork spareribs
  • 1/4 cup olive oil
  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper (optional)
  • 1 cup barbecue sauce (optional)
    Cheesy Mashed Potatoes:
  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 3 tbsp unsalted butter
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh chives (for garnish)

Directions:
Spareribs:

  1. Prepare the Ribs: Preheat your grill to medium-high heat. In a small bowl, mix the olive oil, paprika, garlic powder, onion powder, salt, black pepper, dried thyme, and cayenne pepper (if using) to create a rub. Massage the rub into both sides of the spareribs.
  2. Grill the Ribs: Place the ribs on the grill and cook for 20-25 minutes per side, or until the ribs are tender and have a nice char. The internal temperature should reach at least 145°F (63°C). During the last 10 minutes of grilling, brush the ribs with barbecue sauce, if using. Remove from the grill and let rest for a few minutes before slicing.
    Cheesy Mashed Potatoes:
  3. Boil the Potatoes: Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes. Drain well.
  4. Mash the Potatoes: Return the potatoes to the pot. Add the milk, sour cream, and butter. Mash until smooth and creamy.
  5. Add the Cheese: Stir in the shredded cheddar cheese until fully melted and combined. Season with salt and pepper to taste.
  6. Garnish and Serve: Transfer the cheesy mashed potatoes to a serving dish. Garnish with chopped fresh chives.
