Meat
- 1 lb Sirloin steak
Produce - 3 Different colored large bell peppers
- 1 tsp Garlic powder
- 2 Green onions
- 1/2 tsp Oregano, dried
- 1 small handful Parsley or cilantro, fresh
- 1 Yellow onion, large
Baking & Spices - 2 tbsp Avocado oil
- 1/4 tsp Black pepper, ground
- 1 tsp Chili powder
- 1/2 tsp Paprika, smoked
- 1/2 tsp Sea salt
Nuts & Seeds - 1 tsp Cumin, ground
Instructions:
- Prepare the Ingredients:
o Slice the sirloin steak thinly against the grain.
o Slice the bell peppers, yellow onion, and green onions into thin strips.
o Finely chop the fresh parsley or cilantro. - Make the Fajita Seasoning:
o In a small bowl, mix together:
1 tsp garlic powder
1/2 tsp dried oregano
1/4 tsp ground black pepper
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp sea salt
1 tsp ground cumin - Marinate the Steak and Vegetables:
o Place the sliced steak, bell peppers, yellow onion, and green onions in a large bowl.
o Drizzle with 2 tbsp avocado oil and sprinkle the fajita seasoning mix over the ingredients.
o Toss everything together until well coated. Let it marinate for about 15-30 minutes. - Cook the Fajita Fillings:
o Heat a large skillet or grill pan over medium-high heat.
o Add the marinated steak and vegetables to the hot skillet.
o Cook for 5-7 minutes, stirring occasionally, until the steak is cooked to your desired doneness and the vegetables are tender. - Roll-Up the Fajitas:
o Lay out a slice of cooked steak and place some cooked vegetables in the center.
o Roll up the steak around the vegetables to form a roll-up.
