Ingredients:
- 2 (8-inch) tortillas (use corn tortillas for gluten-free)
- 1/4 cup cheddar cheese, shredded
- 1/4 cup Monterey Jack cheese, shredded
- 1/4 cup cooked chicken, shredded or diced
- 1 tablespoon onion, diced
- 1 teaspoon cilantro, chopped
Directions:
- Heat a pan over medium heat.
- Place one tortilla in the pan and sprinkle half of the cheddar cheese and half of the Monterey Jack cheese evenly over the tortilla.
- Add the cooked chicken, diced onion, and chopped cilantro on top of the cheese.
- Sprinkle the remaining cheese over the chicken mixture.
- Place the second tortilla on top to cover the filling.
- Cook the quesadilla until it is golden brown and crispy on one side, about 2-4 minutes.
- Carefully flip the quesadilla using a spatula and cook until the other side is golden brown and the cheese is melted, about another 2-4 minutes.
- Once both sides are golden brown and the cheese is melted, remove the quesadilla from the pan and transfer it to a cutting board.
- Let the quesadilla cool for a minute or two before slicing it into wedges.
- Serve the chicken quesadillas warm with your favorite toppings such as salsa, guacamole, sour cream, or hot sauce.
Option: You can use your favorite size tortillas for this recipe. Just adjust the amount of filling accordingly.
