Ribeye Steak with Caramelized Onions and Mashed Potatoes

Ingredients:

For the Ribeye Steak:

  • 2 ribeye steaks (about 1 inch thick)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Fresh rosemary sprigs (optional)

For the Caramelized Onions:

  • 3 large onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth
  • 1 tablespoon fresh thyme leaves (optional)

For the Mashed Potatoes:

  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions:

Step 1: Cook the Potatoes

  1. Place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot.
  3. Add the milk and butter, then mash until smooth. Season with salt and pepper to taste. Keep warm.

Step 2: Caramelize the Onions

  1. In a large skillet, melt the butter and olive oil over medium heat.
  2. Add the sliced onions, sugar, salt, and black pepper. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 25-30 minutes.
  3. Add the beef broth and fresh thyme (if using), and cook for an additional 5 minutes until the liquid is mostly absorbed. Remove from heat and set aside.

Step 3: Cook the Ribeye Steaks

  1. Preheat your grill or a large skillet over high heat.
  2. Rub the ribeye steaks with olive oil and season generously with salt and pepper.
  3. Place the steaks on the hot grill or skillet and cook for 4-5 minutes per side for medium-rare, or until your desired level of doneness.
  4. For the last minute of cooking, add the butter, minced garlic, and rosemary sprigs to the pan and baste the steaks with the melted butter.
  5. Remove the steaks from the heat and let them rest for 5 minutes before serving.

Step 4: Serve

  1. Arrange a generous scoop of mashed potatoes on each serving plate.
  2. Place the ribeye steaks on top of the mashed potatoes and spoon the caramelized onions over the steaks.
  3. Garnish with chopped fresh parsley.
