Maple Bacon Carrots

Ingredients:

  • 1 pound carrots, peeled and cut into sticks or baby carrots
  • 4 slices bacon, chopped
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C) and prepare baking sheet.
  2. Toss carrots with olive oil, salt, pepper, garlic powder, and smoked paprika.
  3. Spread carrots on baking sheet and sprinkle chopped bacon over them.
  4. Roast in the oven for 20-25 minutes until carrots are tender and bacon is crispy.
  5. Drizzle maple syrup over carrots and bacon, toss to coat.
  6. Optional: broil for 2-3 minutes for extra caramelization.
  7. Garnish with parsley and serve warm.
