Lasagna Rolls


Ingredients:

8 lasagna noodles
1 lb ground turkey
2 cups ricotta cheese
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 egg
2 cups marinara sauce
1/4 cup chopped fresh parsley
1/2 cup diced onion
2 cloves garlic, minced
1 tsp Italian seasoning
Salt and pepper to taste
Instructions:

Cook lasagna noodles according to package directions. Drain and set aside.
Preheat oven to 375°F (190°C).
In a skillet, cook ground turkey with diced onion and minced garlic until browned. Add Italian seasoning, salt, and pepper.
In a bowl, mix ricotta cheese, 1 cup mozzarella, Parmesan, egg, and parsley.
Spread a layer of cheese mixture on each lasagna noodle. Top with the cooked turkey mixture.
Roll up the noodles and place them seam-side down in a baking dish.
Pour marinara sauce over the rolls and sprinkle with remaining mozzarella cheese.
Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until cheese is melted and bubbly.
Garnish with extra parsley before serving.
Notes:

Substitute turkey with ground chicken or beef if preferred.
