Strawberry Red Velvet Cheesecake

Ingredients:

  • Whipped cream
  • 3 to 4 large eggs
  • Red velvet cake crumbs
  • 1 cup sour cream
  • 1 to 2 teaspoon vanilla extract
  • 24 oz cream cheese, softened
  • 1/4 cup unsalted butter, melted
  • 1 cup granulated sugar
  • Fresh strawberries
  • 2 cups graham cracker crumbs
  • 1 teaspoon red food coloring
  • 1/4 cup strawberry puree.

  • Instructions:
  1. Preheat the Oven: Heat your oven to 325°F and grease a springform pan. (9inch )
  2. Prepare the Crust: Mix graham cracker crumbs with melted butter. Press the mixture into the bottom of the pan and bake for 10 to 12 minutes. Let it cool.

  1. Make the Cheesecake Filling: Beat softened cream cheese until smooth. Add sugar, sour cream, and vanilla extract, mixing well. Incorporate the eggs one at a time. Stir in the strawberry puree and red food coloring until fully blended/ mixed. .
  2. Assemble: Pour the cheesecake mixture over the cooled crust, ensuring it spreads evenly.

  1. Bake: Place the cheesecake in the oven and bake for 50-70 minutes, or until it’s set. Once done, turn off the oven, crack the door, and let the cheesecake cool inside for 45 m to 1 hour.

  1. Chill: After cooling, refrigerate the cheesecake for at least 4 hours to set completely.
  2. Decorate and Serve: Before serving, top the cheesecake with whipped cream, fresh strawberries, and a sprinkle of red velvet cake crumbs.
