7 MINUTE FROSTING


Ingredients:
1 1/2 cups granulated sugar
1/3 cup cold water
1/4 teaspoon cream of tartar
3 egg whites
1 teaspoon vanilla extract
Instructions:
In a medium-sized saucepan, mix together the sugar, water, and cream of tartar. Heat the mixture over medium heat, stirring constantly, until the sugar dissolves and the mixture comes to a boil.
Once the mixture starts to boil, stop stirring and let it continue to cook until it reaches 240°F (115°C) on a candy thermometer. This should take about 5-7 minutes.
While the sugar mixture is cooking, place the egg whites in a large bowl and beat with an electric mixer until stiff peaks form.
Once the sugar mixture has reached 240°F, remove it from the heat and slowly pour it into the bowl with the egg whites, while continuing to beat the egg whites on high speed.
Continue to beat the mixture on high speed for 7 minutes, or until the frosting is thick, glossy, and holds its shape. Add the vanilla extract and beat for an additional 30 seconds.
Use the frosting immediately to frost your cake or cupcakes.
