Caprese Arugula Salad with Lemon-Basil Dressing

Ingredients:

  • 1 bunch of arugula, washed and dried
  • 1 pint cherry tomatoes, cut in half
  • 1 ball of fresh mozzarella, cut into slices
  • 1/2 cup chopped fresh basil
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon of honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper Instructions:
  1. In a large bowl, combine the arugula, tomatoes and mozzarella.
  2. In a small bowl, whisk together the basil, olive oil, lemon juice, honey, salt and pepper.
  3. Drizzle the dressing over the salad and toss to coat.
  4. Serve immediately.
