Blueberry Glazed SalmonDelicious Glazed Salmon with Cranberry Sauce


Ingredients:

4 salmon fillets
1 cup fresh or frozen blueberries
1/4 cup sugar
1/4 cup balsamic vinegar
1/4 cup water
2 tablespoons of honey
1 clove garlic, finely chopped
1 teaspoon fresh ginger, grated
1 tablespoon olive oil
Salt and black pepper to taste
Parsley sprigs to decorate
Instructions:

Preheat the oven to 200°C (400°F).
In a frying pan, heat the olive oil over medium heat. Add the garlic and ginger, and sauté until fragrant, about 1 minute.
Add the cranberries, sugar, balsamic vinegar and water. Simmer for 10 minutes, or until mixture reduces and thickens. Stir occasionally.
While the sauce is cooking, season the salmon fillets with salt and pepper.
Place the salmon fillets on a baking sheet and spread them with a light coating of honey.
Bake the salmon for 12-15 minutes, or until cooked through.
Remove the salmon from the oven and cover with the glazed cranberry sauce. Garnish with parsley sprigs before serving.
