Double Crunch Honey Garlic Chicken Breasts

Ingredients:

For the Chicken:

4 large boneless skinless chicken breasts
2 cups flour
4 tsp salt
4 tsp black pepper
3 tbsp ground ginger
1 tbsp freshly ground nutmeg
2 tsp ground thyme
2 tsp ground sage
1 tsp cayenne pepper
2 tbsp paprika
4 eggs
8 tbsp water
Canola oil for frying

For the Honey Garlic Sauce:

2 tbsp olive oil
3-4 cloves minced garlic
1 cup honey
1/4 cup low sodium soy sauce
1 tsp ground black pepper

Directions:

Prepare the Chicken:
Place chicken breasts between two sheets of plastic wrap and pound with a meat mallet to an even thickness of about 1/2 inch. Alternatively, slice them horizontally into thinner halves.
In a bowl, sift together flour, salt, black pepper, ginger, nutmeg, thyme, sage, cayenne pepper, and paprika. Reserve half of this mixture in a Ziploc bag for future use.
Prepare an egg wash by whisking together the eggs and water.
Season the chicken with salt and pepper. Dredge in the flour mixture, dip into the egg wash, and coat again in the flour mixture, pressing to ensure it adheres.
Fry the Chicken:
Heat a skillet with about a half-inch of canola oil over medium heat (just below medium to avoid burning).
Fry the chicken for about 4-5 minutes on each side until golden brown and crispy. Drain on a wire rack.
Prepare the Honey Garlic Sauce:
In a medium saucepan, heat olive oil over medium heat. Add garlic and cook until soft but not browned.
Add honey, soy sauce, and black pepper. Simmer for 5-10 minutes, watching to ensure it doesn’t foam over. Remove from heat and set aside.
Coat the Chicken:
Once the chicken is cooked and drained, dip each piece into the honey garlic sauce to coat.
Serve:
Serve the chicken immediately with your choice of noodles or rice, ensuring each piece is generously coated with the honey garlic sauce.
Optional Baking Method:

If you prefer to bake, preheat your oven and a baking sheet to 425°F. Coat the chicken as directed, place on the heated oiled pan, and spray with vegetable oil. Bake for 15 minutes, flip the chicken, then bake for another 10-15 minutes until crispy. Dip in the sauce as usual.
