Tangy Homemade Sour Strawberry Gummies

Ingredients:
1 cup fresh strawberries, hulled and pureed
1/2 cup water
1/4 cup lemon juice
2 tablespoons honey
2 tablespoons granulated sugar
4 tablespoons gelatin powder
Extra granulated sugar for coating (optional)

Directions:
In a medium saucepan, combine the strawberry puree, water, lemon juice, and honey. Heat over medium heat until warm but not boiling.
Gradually sprinkle the gelatin over the strawberry mixture, whisking continuously to avoid lumps. Continue to whisk until the gelatin is completely dissolved.
Remove the mixture from heat and pour it into silicone gummy molds.
Refrigerate the molds for at least 2 hours, or until the gummies are firm.
Once set, remove the gummies from the molds and roll them in granulated sugar for an extra sour coating, if desired.
Store the gummies in an airtight container in the refrigerator.
