Turtle Caramel Cake

Here’s a delicious recipe for Turtle Caramel Cake:

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Caramel Sauce:

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cut into pieces
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt

For the Topping:

  • 1 cup chopped pecans, toasted
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat the Oven and Prepare the Pan:
  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  1. Make the Cake:
  • In a large mixing bowl, sift together the flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  • Stir in the boiling water until the batter is well combined. The batter will be thin.
  • Pour the batter into the prepared baking pan.
  1. Bake the Cake:
  • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
  1. Make the Caramel Sauce:
  • In a medium saucepan, heat the granulated sugar over medium heat, stirring constantly with a wooden spoon or heat-resistant spatula.
  • The sugar will form clumps and eventually melt into a thick, amber-colored liquid as you continue to stir. Be careful not to burn it.
  • Once the sugar has completely melted, add the butter. Be cautious as the mixture will bubble vigorously.
  • Stir the butter into the caramel until it is completely melted, about 2-3 minutes.
  • Slowly drizzle in the heavy cream while stirring continuously. Again, be cautious as the mixture will bubble up.
  • Allow the caramel sauce to boil for 1 minute. Remove from heat and stir in the salt. Let it cool slightly.
  1. Assemble the Cake:
  • Using the handle of a wooden spoon, poke holes all over the cooled cake.
  • Pour the warm caramel sauce over the cake, spreading it evenly and allowing it to seep into the holes.
  • Sprinkle the chopped pecans and chocolate chips over the top of the cake.
  1. Chill and Serve:
  • Refrigerate the cake for at least 1 hour to allow the caramel to set and the flavors to meld.
  • Slice and serve your Turtle Caramel Cake chilled, and enjoy!
