Chicken and Dumplings

Certainly! Here’s a classic recipe for Chicken and Dumplings:

Ingredients:

For the Chicken:

  • 1 whole chicken (about 4 pounds), cut into pieces
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried parsley

For the Dumplings:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 3/4 cup milk

Instructions:

  1. Cook the Chicken:
  • Season the chicken pieces with salt and pepper.
  • In a large Dutch oven or pot, heat the vegetable oil over medium-high heat.
  • Add the chicken pieces and brown them on all sides, about 5 minutes per side. Remove the chicken from the pot and set it aside.
  • In the same pot, add the chopped onion, carrots, celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  • Return the browned chicken pieces to the pot.
  • Pour in the chicken broth, and add the bay leaf, dried thyme, rosemary, sage, and parsley.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 45 minutes to 1 hour, or until the chicken is cooked through and tender.
  1. Make the Dumplings:
  • In a mixing bowl, whisk together the flour, baking powder, and salt.
  • Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Stir in the milk until a soft dough forms.
  • Drop spoonfuls of the dough into the simmering chicken broth. Cover and cook for 15 minutes without lifting the lid. The dumplings will puff up and cook through in the steam.
  1. Finish the Dish:
  • Once the dumplings are cooked, remove the lid and carefully stir the pot to combine the dumplings with the chicken and vegetables.
  • Taste and adjust seasoning with salt and pepper if needed.
  • Serve the Chicken and Dumplings hot, garnished with chopped fresh parsley if desired.

This comforting dish is perfect for cold winter nights or any time you’re craving a hearty and satisfying meal. Enjoy your homemade Chicken and Dumplings!
