Spicy Steak Fajitas

Here’s a recipe for Spicy Steak Fajitas:

Ingredients:

For the Steak Marinade:

  • 1 ½ pounds flank steak, thinly sliced against the grain
  • ¼ cup olive oil
  • 3 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste

For the Fajita Vegetables:

  • 2 bell peppers (any color), thinly sliced
  • 1 onion, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For Serving:

  • 8 small flour tortillas
  • Optional toppings: salsa, sour cream, guacamole, shredded cheese, chopped cilantro, lime wedges

Instructions:

  1. In a bowl, whisk together olive oil, lime juice, minced garlic, chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and pepper to make the marinade.
  2. Place the thinly sliced flank steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, making sure it’s evenly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, or overnight for best results.
  3. In a separate bowl, toss the sliced bell peppers and onions with olive oil, salt, and pepper.
  4. Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and discard any excess marinade.
  5. Grill the steak for 3-4 minutes per side, or until cooked to your desired doneness. Remove the steak from the grill and let it rest for a few minutes before slicing it thinly against the grain.
  6. While the steak is resting, grill the bell peppers and onions in a grill basket or on a grill pan until they are tender and slightly charred, about 8-10 minutes.
  7. Warm the flour tortillas on the grill or in a skillet for a minute on each side.
  8. To assemble the fajitas, place a few slices of grilled steak and some grilled peppers and onions onto each warm tortilla. Serve with optional toppings such as salsa, sour cream, guacamole, shredded cheese, chopped cilantro, and lime wedges.
